“The autoimmune protocol (AIP) diet is a relatively new, food-based approach to eliminating unwanted inflammation in a person’s body. It’s a diet that’s thought to help heal your gut to reduce inflammation created by autoimmune conditions. The diet is very restrictive and mainly includes meats and vegetables.”

In October, I changed my diet drastically when I discovered that I had an autoimmune disease. I discovered I was eating a zillion things that were harmful to my body. At first, the change was extremely overwhelming. I had organized a gathering with women at a restaurant prior to my diet change and had to look at the menu carefully. It may have taken me about 20 minutes to figure out what was Courtney friendly. The picture above marked the beginning of my new health journey.
Since I’ve changed my diet, I’ve lost around 10 lbs and this was solely a diet change with little exercise. I feel like I have more energy and less brain fog. This diet change isn’t designed for everyone and most people go on it to provide an opportunity for our bodies to heal prior to reintroducing food that you restricted.
If you are like me and love to see visuals, these are some photos that practically show you what I cannot eat.

Friends, I am still learning all the things, but I have enjoyed learning new recipes and different ways to eat the things that I can eat. I am no master, but my hope is that in sharing this experience and journey that you can benefit from it too. The things that are healthy for you may not be healthy for the next person. It is however beneficial to hear about things that help others.
Thank you for joining my journey and I hope that you are enjoying all the recipes that we are trying.
